The core loop locks you into a specific sequence you must perform with care: Add sauce to the tortilla, grill it, then fold it to complete each taco correctly. You must follow customer requests carefully and keep the stand running smoothly through each night. The pressure comes from balancing speed with accuracy while becoming attuned to the small tells of each customer, so the line moves without bottlenecks and mistakes don’t pile up.

Customers arrive with different orders and attitudes. Some are impatient or rude, while others are fussy or distracted.
