What you do

• Drive through the city: orders don’t wait. Navigate busy streets, plan routes, and keep the kitchen running in the back as you move, all while traffic and weather challenge your timing.
• Shop for ingredients: before service begins, scour markets to stock the pantry. Missing items or poor buys alter menus, raise risk, and can reshape the whole day’s strategy.
